Preheat oven and “flameproof” baking dish or skillet to 400 degrees and brush with half the butter. Sprinkle with 2 tablespoons of water. Season fillets with salt and pepper and brush the top of the fillets with the rest of the butter. Place on stovetop and bring the water in the pan to boil. Immediately transfer to oven and bake at 400 for about 7 minutes.
The fish is done if a metal skewer in the fish is warm when inserted for 5 seconds. If cold still raw, if hot too late.
